Directions

Heat large cast iron skillet on high heat till smoking hot. Add corn to dry skillet and roast and char kernels till they begin to pop.

Add in butter and red onion and mix. Cook for about 3 minutes, stirring.

Add remaining ingredients.

Season and serve warm or cold.

I substituted Pepperoncinis for the olives, added cilantro and celery, left out the vinegar and the olive oil, used a can of fire-roasted tomatoes, and when I was roasting the corn I included about 5 fresh diced red chilis....I cooked the corn/chilis and onions like the recipe calls for, and when the onions and corn and butter were sizzling for a minute or two I turned the heat off and added the remaining ingredients, then covered and let sit for half an hour, served it slightly warm, it was great!!!

Havent made the recipe ********* the video. He needed to silk the corn better, who wants to eat silk.

the video recipe is much different than the written... many parts (like 1/2 the onion, lots of basil were left raw, the olive oil was added to the raw then the cooked added to the raw and mixed... more was left raw..watch the video..

the video is very different than the recipe, recipe says to add corn to dry skillet, he added oil before he put the corn in. Which is correct? Is all the basil left raw? The scallions are in the video is two parts, not in the recipe. Which is correct
