Salty Sweet Nut Brittle

Sweet treats for Passover are always welcome and these addictive bites of crisp brittle are so easy to make. If you can't find mixed nuts without peanuts, substitute roasted salted almonds.

Oil a large baking sheet or line with a nonstick silicone liner.

Bring sugar, 1/4 cup water, and salt to a boil in a deep heavy 2- to 2 1/2-quart saucepan over moderate heat, stirring slowly until sugar is dissolved. Boil gently, without stirring but washing down any sugar crystals on side of pan with a pastry brush dipped in cold water, until syrup begins to turn golden, 8 to 10 minutes. Continue to boil, swirling pan occasionally, until syrup is a deep golden caramel. Immediately remove pan from heat and carefully stir in cream with a wooden spoon (mixture will rise up and bubble vigorously).

Stir in nuts and farfel and quickly pour into baking sheet, spreading and smoothing with back of spoon before mixture hardens.

Transfer baking pan to a rack and cool brittle completely . Break brittle with your hands into bite-size pieces.

Cooks' Notes: Makes 6 cups candy. Brittle can be made 1 week ahead and kept, at room temperature, in an airtight container.
