Sauteed Citrus Carrots

Sauteed carrots pair nicely with the DEVILED CHICKEN DRUMSTICKS, offering a citrusy zing from orange and lime.

Ingredients

Serves:

    • 1 1/2 pounds carrots, peeled and cut crosswise into 1/4-inch rounds
    • 1/2 cup water
    • 2 tablespoons orange juice
    • 1 tablespoon lime juice
    • 1/2 teaspoon orange zest
    • 1/2 teaspoon lime zest
    • 1 tablespoon butter
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper

Directions

Heat oil and butter in a 12-inch heavy skillet over high heat until foam subsides, then saute carrots with 1/4 teaspoons each salt and pepper until carrots are lightly browned, 5 to 6 minutes. Add water and simmer, covered until water is evaporated and carrots are tender, about 4 minutes. Remove lid and if necessary boil until liquid is reduce to about 2 Tablespoons. Stir in orange and lime juices, zests, and salt and pepper to taste.

This recipe makes no sense, there is no oil or butter listed, the carrots should be sauteed and the water and juice along with the lime and orange zeat should all be added at the same time to give a good glaze.

Directions say "Heat oil", but there is no oil on the ingredient list.

Fried carrots: Boil carrots until tender in water. Drain,pat dry. In frying pay w/ cover add butter (just about that much) little more than to cover the bottom of the frying pan. Heat butter, when warm add carrots cook for about 15 minutes until brown, then add BROWN sugar (1/2 cup)blend together. cook for another 15 minutes on low. then serve.

I need some main courses though that are EASY. I am going to be "HOME ALONE" with them for several days and I am old and I am tired!
