Smoky BBQ Baby Back Ribs

Ingredients

Serves:

    • 4 racks of trimmed baby back ribs
    • 3 tablespoon unsweetened cocoa powder
    • 1/4 cup lightly packed dark brown sugar
    • 1/4 cup smoked paprika
    • 2 tablespoons kosher salt
    • 1 teaspoon freshly ground black pepper
    • 1 tablespoon dried ancho chile powder
    • 1 tablespoon ground cumin
    • 2 cups store bought barbecue sauce, for serving if desired

Directions

Prepare rub by mixing cocoa powder, brown sugar, paprika, salt, pepper, chile powder and cumin in large bowl together well. Make sure to break up any clumps. Place ribs on sheet trays and dust all over with rub ensuring to get it in all the cracks. Place ribs, meat side up, cover with plastic wrap and refrigerate to marinate for 3 hours or over night.

Remove ribs from fridge and discard plastic. Place in oven set at 325 degrees F. Cook for 2 1/2 hours until meat is very tender. Finish under broiler for 5 minutes to caramelize then remove from oven and allow to cool slightly.

Cut into double-cut ribs and serve with barbecue sauce on the side.

325 degrees for 2 1/2 hours uncovered will leave the ribs as dry as cardboard. You need to wrap them in foil if you're going to cook that long at 325F. Plus, who would bother to make a dry rub and then ruin it with store-bought BBQ sauce? No thanks.

As a person who smokes meat regularly, this is a downright pathetic recipe. The rub needs work. And why such a hot temp? Compromises leaves no one happy.

This recipe sucks. Anyone who would make a dry rub and then use "store" sauce is lazy and uneducated about BBQ ribs. You might as well just buy Lloyds prepared ribs at the store and sprinkle with some cocoa.

Recipe worked pretty well. I took the advice left by pozboys and wrapped it in foil. Which def kept the meat very moist. The long slow cook made it very tender. However I would def baste it with honey half hour before its done. Lacked sweetness.

The ribs are dry, I've eaten ribs in the top five rib joints in the country. And if you don't get some liquid in there, via apple juice, pineapple juice etc, preferably something acidic to tenderize the meat your ribs will be dry.

I don't care for cocoa mixed with my ribs, and do not like the flavor of cumin spice either. This recipe for ribs, is not for me. I like to slow cook my ribs with charcoal and real mesquite wood on the grill, after marinating the ribs.

Go a little farther by wrapping your ribs in glad wrap or any plastic wrap before you wrap in foil. Just swallow. "No chewing necessary:!

325 for a couple hours is quick and you def need to cover with foil. I smoke my meat in a pit i have on a trailer. I usually smoke my ribs for 4-5 hours at 225

Interesting but falls short. This must be the cocoa manufacturer's association urban test kitchen recipe? It sure leaves a lot to desire if you are familiar with real babybacks smoked properly. Everything is about compromise? This was a mediocre one
