Slaw: Whisk mayonnaise, buttermilk, chives, vinegar, sugar, salt and pepper in a bowl until blended. Add coleslaw; toss to coat. Refrigerate 1 hour, stirring a few times.

Burgers: Gently mix ingredients in a large bowl. Shape into six 1-in.-thick burgers.

Heat outdoor grill. Toast buns on grill; remove to a platter. Cover loosely with foil to keep warm.

Coat burgers with nonstick spray. Grill, turning once, 10 to 12 minutes until an instant-read thermometer inserted from side to middle registers 160°F. Place on buns; top with slaw. Serve remaining slaw on the side.

I know pork BBQ. It needs to be served with what we in Piedmont NC call BBQ slaw. It's not white, it's red and made with the same sauce that the pork is basted with.

Living in the NE now I can't just go into any of the local 21 BBQ places I grew up around and get a quart of slaw or get the "dip" to help make the slaw. So this is what I do.

Take a small head of cabbage and chop it up fine in a food processor. The next ingredients I estimate so you will have to play around with them. That said add 1/2 cup of ketchup, 3-4 TBS of apple cider vinegar, 1-2 TBS of sugar, and salt and pepper to taste.

If you have the chance to get "dip" (the stuff they baste the BBQ with) then you can add that and less ketchup and vinegar.

You may want to add some water so that the whole slaw mixture is fluid. The cabbage should be suspended in the liquid. This will increase as the vinegar and sugar works on the cabbage.

If it's a little dry don't worry it's still going to be good.

Put it on your BBQ pork or use it as a side to your chicken pie oops didn't talk about that yet but it's another great bit of Southern comfort food.
