These are my kids' favorites. They stay chewy even after they come out of the oven.

Ingredients

Serves:

    • 1 cup all purpose flour
    • 1 1/3 cups white spelt flour
    • 3/4 teaspoon baking soda
    • 1 teaspoon kosher salt
    • 8 ounces cold unsalted butter, cut into small pieces (about 2 sticks)
    • 1 cup organic raw cane sugar, or muscovado sugar
    • 3/4 cup granulated sugar
    • 2 large eggs
    • 10 ounces chocolate chips

Directions

Preheat oven to 350 degrees.

Line two baking sheets with parchment paper.

Sift flours and baking soda into a medium bowl. Add salt.

Using a paddle attachment to a mixer, beat butter until softened. Add sugars and beat on medium speed until lightened. Add eggs one at a time, beating until the first one is incorporated before adding the next. Scrape down sides of bowl with rubber spatula if necessary. Add dry ingredients and mix on low speed to combine. Mix in chocolate chips.

Using a small ice cream scoop or spoon, portion 2 tablespoons of dough onto cookie sheet. Bake for 15 minutes or until just browned around the edges.

The dough can also be wrapped and frozen up to one month in the freezer.
