Spiced Skirt Steak

Skirt steak is an inexpensive yet very flavorful cut of meat from the plate section of the cow. It responds well to marinades and quick cooking methods like grilling and broiling. This recipe contains lots seasonings in your spice rack, yet the steak can be used for many dishes, including sliced steak sandwiches and fajitas.

Gather these tools: cutting board, chef's knife, measuring spoons, small bowl, spoon, plastic bag, grill or grill pan

In a small bowl stir together chili powder, cumin, coriander, garlic paste, Worcestershire sauce, sugar, pepper, and oil. Rub mixture all over meat. Marinate meat in a resealable plastic bag, chilled, at least 20 minutes up to overnight.

Remove the meat from the refrigerator and heat a grill or grill pan. Cut steak into large pieces to fit on either surface.

Grill steak on a well-oiled rack set about 4 inches over glowing coals or in hot well-seasoned ridged grill pan over moderately high heat, for about 3 to 5 minutes on each side, or until just springy to touch, for medium-rare meat.

Let steak stand on a cutting board 5 minutes and cut across grain on the diagonal into thin slices.

Serve immediately.

a few things, one very important, you need to remove the membrane from the underside of a skirt steak or it will be like eating a piece of leather and two, why the big need for grill marks when you serve it in thin slices?

Grilling adds FLAVOR and shows Skill. Outside Skirt is Far better than Inner Skirt.ALL Meat MUST be Seasoned with an Ingredient containing SALT ie SOY, Fish Sauce even Hot Sauce has a bunch of Salt. As for the Armchair Budding Recipe Pundits where is your Recipe Published???

Why so mean? I thought this was a site for "Armchair Budding" Cooks? I haven't checked but just because you may have a recipe published does NOT entitle you to be insulting and arrogant. Your post was uncalled for and NOT NEEDED.

I marinade skirt steak in honey teriyaki sauce and my kids inhale it! Much more simple than a 10 ingredient recipe and much faster for the busy moms out there!

Skirt steak is NOT inexpensive. In the central NJ area it's $10 lb. For my family of 9 I usually have to buy at least 4 lbs on those few times that I can afford it. Aside from that, garlic powder, salt & pepper is all that is needed.

I would NEVER return cooked meat to the same container that had held the meat raw. This is basic food handling safety. Aside from that the recipe and method is good.
