Ingredients

4 large eggs1 large firm pepper (green, red, yellow, or orange)1 ripe avocado1 cup leftover pulled pork1 loaf of ciabatta bread, sliced into ½ slices¼ barbecue sauce

Directions

Preheat non stick pan or griddle over medium low heat. Place a large platter out on counter or individual plates. Wash and slice pepper into ½ rings. You will need four. This looks especially nice if you have an assortment but just one color works well too. When pan is heated place pepper rings in/on. Do not crowd. Crack eggs and add 1 pepper ring. Cook eggs over low heat. Cook until done, by preference.

While they are cooking, slice avocados into strips. Slice and toast bread. Reheat pulled pork in microwave for 20-30 seconds to warm, stir and set aside. When eggs are cooked place on individual dishes. Add avocado sections to look like a stem and leaves. Add BBQ sauce to the pulled pork on egg. Place toast on bottom and serve! Serves four.
