Directions
Put the sweet potatoes, coconut milk, butter, sugar, ginger and salt in a medium saucepan over medium heat. Bring to a boil, then reduce the heat so the mixture bubbles gently. cook, stirring, until the potatoes are very tender, 15 to 20 minutes. Cool to room temperature or refrigerate.
Puree the mixture in a blender or food processor and serve cold or at room temperature.
