Ingredients
Directions
Crack egg in a bowl and beat lightly with a fork. Heat the oil in a small frying pan until hot, not smoking. Pour in the egg and swirl pan so that it coats the base evenly.
Cook underside until golden. Slide egg out of pan and roll it up like a pancake. Slice into 1/4 inch rounds and set aside for garnish.
In a large pan, combine the stock, carrots, and cabbage and bring to a boil. Reduce the heat and simmer for 5 minutes, add soy sauce, sugar and pepper.
Stir well and pour into warmed bowls.
Lay a few omelet rounds on the surface of each portion and garnish with cilantro leaves.
