Thyme & Pepper-Rubbed Filet Mignon with Blueberry-Bourbon Barbecue Sauce

Ingredients

1 Tbsp chopped fresh thyme
1 Tbsp extra virgin olive oil
¾ tsp kosher salt
½ tsp coarsely ground pepper
1 lb fillet mignon, 1 1/2 to 2 inch thick, trimmed of fat and cut into 4 portions
¼ cup blueberry-bourbon barbecue sauce, or to taste

Directions

1. Preheat grill to high.

2. Combine thyme, oil, salt and pepper in a small bowl. Rub the mixture on all sides of steaks. Grill the steaks 3 to 5 minutes per side for medium-rare. Let the steaks rest for 5 minutes before serving with Blueberry-Bourbon Barbecue Sauce.
