Turkey Meatballs in Marinara Sauce

Tomato Sauce

Heat the oil in a heavy wide pot over medium-high heat.

Add the shallots and garlic and sauté until tender about 2 minutes.

Add the thyme and bay leaf.

Add the wine and tomatoes and bring to a simmer.

Simmer very gently uncovered over medium-low heat stirring occasionally until the tomatoes break down to form a chunky sauce (you may need to add a little water during the cooking process if the sauce thickens too much) about 1½ hours.

Stir in the basil.

Season the sauce to taste with salt and pepper. Remove the thyme stems and bay leaf.

Meatballs

Combine the turkey breadcrumbs shallots garlic parsley thyme mustard salt and paprika in a large mixing bowl.

Add the egg.

Using your hand gently mix just until blended.

Form the mixture into 6 to 8 meatballs.

Heat the oil in a heavy large frying pan over medium heat.

Fry the meatballs until golden brown all over about 12 minutes.

Using a slotted spoon transfer the meatballs to the tomato sauce.

Simmer gently until the meatballs are cooked through and the flavors are well married about 10 minutes.

Transfer the meatballs and the tomato sauce to serving bowls.

Using a Microplane rasp grater grate the Parmigiano-Reggiano cheese over the meatballs and serve.

This is the only way i will make meatballs now. The sauce is absolutely bursting with flavor and the meatballs are not the slightest bit dry like turkey meatballs typically are. Fabulous recipe in my steady rotation.

We swore we would never make anything but ground beef meatballs until we tried this recipe. It tastes so fresh and delicious. Well worth the time to make them. I started making the meatballs a bit smaller and also doubling up on the sauce ingredients to be able to freeze extra batches for later. Highly recommend this recipe.

I made this tomato sauce with plum tomatoes from our garden; I did peel them first, however. Also, I added one can of marzano canned whole tomatoes which I chopped as I was afraid I would not have enough sauce. I thought the meal was delicious.

Dont use Anchovies in a meatball..try using MBT beef seasoning, I use Lipton onion soup mix, egg, diced onions, diced garlic,italian seasoning, breadcrumb, little grated cheese, and if you want them to be softer you add a little potatoe flake

this recipe was super easy to make and it came out absolutely fabulous!! i used only a half of a shallot in the sauce, as we are not a big fan of onions. i subbed ground chicken for the turkey because that is what i had available!AMAZINGLY DELICIOUS!

you do not need to use ground turkey breast, just use a higher quality of turkey, like the ground turkey from a farmer's market, or Whole Foods probably has a good one.

I also added chopped fresh baby spinach stems removed. I have also made this recipe into turkey burgers and froze them and then put them on the grill frozen. Delicious!!
