Slices of leftover turkey make a perfectly fine sandwich, but this zesty salad is a definite step up. Serve it on rye with a pickle or alongside tossed greens and a glass of crisp white wine.

Ingredients

Serves:

4 cups shredded roasted turkey

1/2 cup mayonnaise

2 celery stalks, chopped

3 scallions, chopped

1 hot chile (such as jalapeno or serrano) finely chopped

1 teaspoon finely grated fresh lemon zest

1 tablespoon fresh lemon juice

1/2 teaspoon smoked paprika or paprika

1/2 teaspoon kosher salt

1/2 teaspoon black pepper

Directions

Toss all ingredients together in a large bowl.
