Vegetable Pot Roast

Preheat oven to 350 degrees F.
Brown the chuck roast evenly on all sides over medium heat in a cooking spray coated Dutch oven. Add the sliced onion, celery, water, salt, and pepper.
Cover the Dutch oven and bake for 1 hour and 15 minutes. Add the sliced carrots and potatoes and continue to cook until the meat and vegetables are tender, roughly 1 additional hour.
Transfer the roast and vegetables to a serving plate and cut the roast into 2-ounce slices. Serve hot.
**As an alternative, you can also try cutting the roast into cubes before cooking yielding more of a stew-like result.
