Directions

Whisk together vinegar and mustard in a medium bowl. Whisk in oil in a slow stream until thickened. Stir in shallot, tarragon and mayonnaise.

Fold in chicken, apple, cranberries and celery. Season with salt and pepper.

Serve salad on toasted whole grain bread or greens.
