To make vinaigrette, combine all ingredients into a small sauce pot and simmer for 10 minutes.

For fruit, heat butter in skillet on medium heat. Add pineapple and allow to caramelize about 3 minutes on each side. Remove from pan and cut each piece into four.

Add remaining ingredients and toss with warm vinaigrette. Divide into bowls.

Finish with picked mint and drizzle with honey.
