Wave Your Flag Cheesecake

Ingredients

Directions

1.Slice 1 cup strawberries; halve remaining strawberries. Set aside. Add boiling water to gelatin mixes in large bowl; stir 2 min. until completely dissolved. Add ice to cold water to measure 2 cups. Add to gelatin; stir until ice is completely melted. Refrigerate 5 min. or until slightly thickened.

2.Meanwhile, line bottom of 13x9-inch dish with cake. Add sliced strawberries and 1 cup blueberries to thickened gelatin; stir gently. Spoon over cake. Refrigerate 4 hours or until gelatin is firm.

3.Beat cream cheese and sugar in large bowl with whisk until well blended. Stir in COOL WHIP; spread over gelatin. Arrange strawberry halves on cream cheese mixture to resemble stripes of flag. Add remaining blueberries for stars.

I didn't get to make it on the 4th because my grandkids wanted me to wait until today!!! They loved helping and I want to thank jan for her recipe, it was soooo helpful!!! Looks so yummy, it's in the fridge now!!! Was easier to make after I read jan's recipe!! Thanks so much, me, hubby, and grandkids had fun making it!!! God bless you!

I made this yesterday, and it was really good. A couple things I would do different, when you layer the sliced pound cake, make sure it lays flat. Also, the jell-o mixture took more like 10 minutes to firm up. When you spread the jell-o fruit mixture, again make sure it's all level so when you frost it, it's even. Some others have left comments with the package sizes and better directions, it was extremely helpful. I didn't think the directions above were very clear.

2 8oz pkgs. cream cheese and the smaller boxes of jell-o, the 4 1/2 serving box.

I put gelatin in frog for 5 min,not firm. Did it take longer to firm for you?

You could cut down on the calories for this cake by using sugar-free gelatin, neufschatel cheese instead of cream cheese, Splenda instead of sugar, and "lite" cool whip. Not as rich, but still "yummy" and diabetics could enjoy a piece too!

I think there is something not quite right about the above recipe. How much boiling water?? Then it is suppose to thicken in 5 minutes, mine was in 20 minutes. How thick is thick??
