True Irish soda bread consists of nothing more than a mixture of flour (whole wheat or white), baking soda, buttermilk and salt -- the bread takes its name from the baking soda ("bread soda" in Ireland) that's used to leaven it instead of yeast and kneading. As Irish soda bread evolved in the United States, it became a more decadent concoction, often containing plenty of eggs, sugar and butter, plus raisins or currants and caraway seeds. But what does tie this newfangled soda bread to the traditional Irish version is that it remains a "quick" bread: Thanks, again, to the baking soda, there's no need to wait while the bread rises -- just mix, knead very briefly and bake.
